Discover Eden Ciders at the Shelburne Vineyard Tasting Room

Eden Specialty Ciders brings a unique and sophisticated approach to cider making, which can experience at our Shelburne Vineyard tasting room. Eden’s philosophy is centered around producing ‘harvest’ ciders—crafted from apples pressed at peak ripeness during harvest, not from cold storage apples processed year-round. This approach, akin to traditional winemaking, results in ciders that are rich in flavor and complexity, reflecting the unique terroir of Vermont’s apple orchards.

Visitors to the Shelburne Vineyard tasting room will experience ciders that challenge conventional perceptions. Unlike the often overly sweet ciders that dominate the market, Eden’s ciders are dry, ranging from sparkling to still, and made with heirloom and tannic apple varieties. These apples, grown sustainably and harvested at their flavor peak, contribute to a distinct and unique taste profile.

Eden Ciders Harvest and Ice Ciders are available in select tastings, by the glass, and by the bottle in our retail shop.


 

Ice Cider: A Taste of Vermont's Winters

In addition to Harvest Ciders, we also feature Ice Ciders on our tasting menu. As with Harvest Ciders, our ice ciders are produced from locally grown, fresh heirloom variety apples. The juice is naturally cold-concentrated outdoors in our cold Vermont winter weather.

There is no added sugar, acid, flavor, color—anything used in our ice ciders, just fantastic apples, cold weather, and a little yeast to do the job before being filtered out at the end. Voilà—the soul of the apple in liquid form. Vermont is one of the few states in the US that is warm enough for apple culture yet cold enough to reliably produce ice cider in the winter using naturally freezing temperatures.

Each ice cider we produce is unique, but all share the signature balance of sweetness to acidity - which pairs exceptionally with the local cheeses on our provisions menu in the Shelburne Vineyard Tasting Room.
